Chili Quilles

Picked this up from Vicki who picked it up from Roy who picked it up in New Mexico.  mmmm.

Ingredients

Red Sauce

3/4 cube butter
4 T flour
? chicken bullion cubes
chili powder  (preferably New Mexico Chimo Chili)
? water

Main Ingredients

Tortilla chips
chicken breast
cheddar cheese

Preparation

Preparation for the Red Sauce:

  1. Make a chicken broth by boiling water and adding chicken bullion cubes.

  2. Melt the butter in a frying pan and slowly add in the flour, stirring constantly.  Stir until a consistency of a paste and a golden brown color.

  3. Add the chicken broth to the golden brown flour and butter.

  4. Sprinkle in or add chili powder until the desired spice and hotness.  I suggest you taste and add more chili powder until the desired taste.

Preparation for eating

  1. Cook some chicken breasts and slice into chunks or long square strips.

  2. On a plate, break up some tortilla chips.  Then add a layer of the chicken strips.  Then add a layer of cheddar cheese.  Then add a layer of the sauce. 

  3. Eat, or layer again and eat.
