Chicken Breasts Cordon Bleu
Grandma New's recipeIngredients
| 3 | chicken breasts cut in half, boned & skinned |
| 6 slices | Swiss cheese |
| 6 slices | boiled ham |
| 1/2 C | flour |
| 1/2 t. | salt |
| 1/4 C | butter |
| 1/4 C | white wine |
| 1/4 C | milk |
Preparation
Flatten
chicken breasts to about 1/2".
This is easily done by placing chicken between 2 sheets of waxed
paper and pounding with a heavy frying pan.
Place
a slice of cheese and a slice of ham inside each breast and roll.
Pin the rolls with wooden toothpicks.
Dip
rolls in milk, then the flour & salt mixed together.
Heat butter to the aroma stage; saut chicken rolls at med heat
until lightly browned; reduce
to low heat and add wine. Cover;
allow to cook approximately 30 min (fork tender).
A little chicken broth or water may be required; add during final
stage of cooking. Serves 6.
