Calavacitas
Ingredients
| 1 t | olive oil |
| 2 cloves | garlic |
| 4 | summer squash or zucchini (medium size) |
| 1 Can | Rotel Tomatoes and Green Chilies (for spice) or 1 can tomatoes |
| 1/4 C | milk |
| 1/2 C | green chili (chopped) |
| 1 | onion (chopped) |
| 1 can | whole kernel corn (drained (fresh corn is even better) or frozen) |
| 1/2 | cheese (grated) |
| salt | |
| pepper |
Preparation
Saut onion & garlic in oil; add squash, rotel or tomatoes and chili.
Mix and cook covered for 20 minutes.
Add corn and seasonings and cook 5 minutes longer.
Add cheese, stirring constantly to prevent sticking, until cheese melts.
