Fruit Cocktail Cake
Grandma New's recipe
Ingredients| 1 lb can | fruit cocktail (with juice) |
| 2 | eggs well beaten |
| 22 C | flour |
| 1 1/2 C | sugar |
| 2 t | soda |
| 1/2 t | salt |
| TOPPING | |
| 1 | small can pet milk |
| 1 | stick of oleo |
| 1 C | sugar |
| 1 C | coconut |
| 1/2 t | vanilla |
Preparation
Mix fruit and eggs. Sift next 4 ingredients together and add to fruit mixture.
Pour
into greased 13 X 8 pan and sprinkle 1/2 C brown sugar mixed with 1/2 C
nut meats over top of batter. Bake
at 350 degrees for 35 - 40 minutes, remove from oven and pour on
topping.
Topping: Boil milk, oleo and sugar 2 minutes, then add 1 C coconut and 1/2 t vanilla.
