Cupcake Fruit Cakes

Grandma New's recipe

Ingredients
1 C oil
1 1/2 C brown sugar
4 eggs
2 C sifted flour
1 t baking powder
2 t salt
2 t cinnamon
3 C chopped nuts (cashews)
1 C pineapple or orange juice heated to boiling
2 t allspice
1 t cloves
1 C candied pineapple
1 1/2 C candied cherries
1 large jar mixed fruit
1 C raisins
1 C currants

Preparation

Beat eggs, sugar and oil creamy.  Sift flour, baking powder, salt, spices together.  Alternately stir into oil mixture with juice.  In another bowl mix all fruit and nuts with 1 C flour.  Pour batter over fruit mixture and mix well.  Bake in 275 degree oven with a pan of water 1 hour.
