Cupcake Fruit Cakes
Grandma New's recipe
Ingredients| 1 C | oil |
| 1 1/2 C | brown sugar |
| 4 | eggs |
| 2 C | sifted flour |
| 1 t | baking powder |
| 2 t | salt |
| 2 t | cinnamon |
| 3 C | chopped nuts (cashews) |
| 1 C | pineapple or orange juice heated to boiling |
| 2 t | allspice |
| 1 t | cloves |
| 1 C | candied pineapple |
| 1 1/2 C | candied cherries |
| 1 | large jar mixed fruit |
| 1 C | raisins |
| 1 C | currants |
Preparation
Beat
eggs, sugar and oil creamy. Sift
flour, baking powder, salt, spices together.
Alternately stir into oil mixture with juice. In another bowl mix all fruit and nuts with 1 C flour.
Pour batter over fruit mixture and mix well.
Bake in 275 degree oven with a pan of water 1 hour.
